Vineyards: Selected 15–32-year-old vineyards, located at an altitude of 1.500-1.900 ft.
Terrain: Mostly limestone
Microclimate: Continental climate with mild to cold winters and a few snowfalls and summers with high daytime temperatures and cool nights at this specific altitude of the Appellation.
Winemaking: Harvest by hand, followed by strict selection on the sorting table and afterwards, the destemmed grapes are cold soaked at 46-50°F for a period of 3-4 days. The wine is fermented in stainless steel vats at 72-77°F and the malolactic fermentation is carried out, before maturation for 6 months in French barriques.
