Vineyards: Estate owned together with selected 15–40-year-old vineyards, located at an altitude of 2.000-2.150 ft.
Terrain: Mostly clay
Microclimate: Cold winters with snowfall and summers with very cool nights, regardless of high daytime temperatures
Winemaking: grapes are first chilled in a cooling chamber and the next day they are transferred to the press, where we use the free run juice and the first mild presses to produce this wine. Selected yeasts are used for the fermentation which takes place in stainless steel tanks at 61-64˚F. Contact with the fine lees for 60 days after the end of fermentation with weekly batonnage.
