Vineyards: Selected 21–28-year-old vineyards, located at an altitude of 800-1.000 ft.
Terrain: Sandy clay, granite and schist
Microclimate: Warm, continental climate with mild winters, contributing to the structure and ageing potential of P.D.O. Naoussa.
Winemaking: The grapes are handpicked and sorted on a conveyor belt and afterwards they are transferred to the fermentation tanks with 10-15% whole bunches. After cold soak for 4 days at 46-48°F, the fermentation process starts and lasts for 14-17 day at controlled temperatures from 72-75°F. The wine matures for 6-8 months in French oak barrels, where at the same time malolactic fermentation takes place.
